Spinach
Spinach (Spinacia oleracea) is a hardy leafy annual plant of the amaranth family (Amaranthaceae). It is typically used as a vegetable in a plethora of recipes. Believed to be native to Iran, it is widely grown today in northern Europe and the US. Today, spinach is marketed as fresh, canned, and frozen to consumers around the world. Spinach is a cold hardy plant; however, soil should not get above 70˚ F and should have full sun.
